I'll go into more detail once the map is complete, but the short answer is "no, not really". Because of the map's relatively small size (2500 block diameter circle), and the presence of large numbers of mountains, there will not be any large uninterrupted bodies of water. This was a gameplay decision to maximize playable area, as flat, stable ground is at a premium. There are however, lakes, a few rivers, and more than likely there will be at least 1 flooded cavern/hollow mountain. That said however, there are some areas of the map that have been designed for the construction of secret cities and such, I'll leave finding them to you. On the subject of small islands however, that IS an interesting question . . .

Perhaps we could add a small expanse of ocean to two (out of four) directions of the map? Or perhaps that could be added in the future?

I can give it an ocean boundary of several thousand blocks, but the main problem is with the way Worldpainter handles it's map edges, and the answer is with a hilariously bad-looking sheer drop-off into the void, or down to an ocean or default or superflat Minecraft world, user's choice. So yes, in theory I could give the map an ocean border of any dimension, but it would look terrible, and server no strategic value. Adding an ocean by means of replacing one of the current four biomes will leave us with very limited space to play with, due to the large mountains giving the map a much more compact feel despite its large size (if you have your render distance turned up all the way, there is nowhere on the map where you will not be able to see at least 1 mountain range in the distance. To give a better sense of scale, it never takes over 5 minutes to cross any of the four biomes in it's largest dimension, and generally less than that.

If I'm reading how Goldfish works right, and/or if I have a decent understanding of multi-world running, we could theoretically have different islands that are simply on different maps, accessible from the main one. They'd be difficult to attack because of this, but... That's the benefit of an island in general, isn't it?

That's something we can look into later on down the line as it can be modular. We don't even necessarily have to limit it to islands, but I think that'll be a good start. But I think it's more important at the moment just to get a groundwork going before we start thinking about expansions and adding on a further work load. Let's at least get our feet in the door.

Edit: Hell, with enough fanagaling we could even do things like naval battles and random events while traveling to another area via ship. Can cover a lot of RP and PVP that was never really explored before. This interests me quite a bit and I'll look into working on that a bit - but again, we're looking at that being far off.

No worries, I am fine with any map as long as it isn't randomly generated. I appreciate all the effort you guys are putting into this and I'm looking forward to playing minecraft again.

MOUNTAINS you mean! I'm not sure about the second, smaller one myself, but in the larger one that is featured in the trailer I made I'd say it's roughly large enough to support a city almost the size of Necropolis. There's plenty of room.
